today i made some things other than salad out of my garden veggies. ok, well, i made a salad too, but that's boring. here are the fun things i made. and listen guys-- zucchini and cucumbers all but grow themselves. and there are so MANY. you should really plant some next year. i picked another SIX cucumbers today! SIX. so now you see why i had to get creative.
cold cucumber dill "soup"
ok well the recipe call this "soup" and i'm not so sure. regardless it is yumz and summery and just a few ingredients. go buy one of those giant tubs (32oz) of plain yogurt. i personally opted for the fat free organic to keep this healthy, but whatever floats your boat. peel and cut up into really small pieces two big cukes. salt your cuke pieces a little and toss around so they're all coated in a bit of salt. in a big mixing bowl, toss in your cuke pieces, your big tub of yogurt, a tablespoon of olive oil, and two finely chopped garlic cloves. then, best of all, tear up about ten sprigs of dill. throw those in there. then, cut up about 10 mint leaves. throw those in there. mix up well. chill for an hour. SO GOOD. makes plenty for lunch for the week, which is how i intend to eat it.
zucchini bread
i made zucchini bread from scratch. it was a lot. too much for me to type here. but, you guys, FROM SCRATCH. and it is so damn good. not healthy at all. usually how it goes though, right. recipe here.
i also made another batch of fresh pesto (when i get the processor down, i'm always looking for anything else that needs a good chop or blend... using that thing is an enterprise). adam and i had it on pasta, broccoli and chicken for dinner. i don't have a recipe, i just make it to my own taste... but i can tell you i use basil (duh), olive oil, pecans, parmesan cheese, salt. that's it. omnomnomnom.
